Kuri Mochi (Chestnut Rice Cakes)
Kuri mochi consists of a soft rice cake layer (gyuhi) and a normal rice cake layer (mochi) filled with candied chestnut and red-bean paste. The chestnuts used are mainly “Tamba chestnuts” and although kuri mochi may be made with mashed red-bean paste (tsubu-an), most are made with pureed sweet red-bean paste (koshi-an).
